Applejack vineyard was planted at Gladysdale by Ray Guerin in '97, and only 2ha of its 11ha are planted to chardonnay. Fermented and matured in both puncheons and ceramic eggs (30%). This is all about purity and precision with its aromas of white stone fruits, crushed rocks and a little white nougat. The palate is, as you'd expect, tightly coiled, waiting to unwind. Saline and long. Along with the Bastard Hill, this will need some time to become more open and expressive. Philip Rich

Aroma: Aromatic lift of white nectarine, lemon zest and flint, with subtle cashew and struck match.
Palate: Focused and linear, showing crystalline citrus, stone fruit and mineral drive supported by fine oak texture and vibrant acidity.
Finish: Long, saline and sophisticated, with lingering citrus and hazelnut nuances.

Food Pairing

Perfect alongside grilled scallops, roast chicken with tarragon butter, or creamy mushroom pasta. Serve lightly chilled to appreciate its full complexity.

Founded by Phil Sexton in 1998, Giant Steps is a benchmark Yarra Valley producer celebrated for its single-vineyard focus and minimalist winemaking led by Chief Winemaker Melanie Chester. The Applejack Vineyard, located in the cooler Upper Yarra subregion, sits on deep red volcanic soils that impart distinctive minerality and tension to the fruit. Each vintage of Applejack Chardonnay is a study in precision and terroir, elegant, pure, and unmistakably Yarra.

Cellaring Potential

Beautiful now for its energy and clarity, yet will evolve gracefully over 8 to 10 years, gaining depth and subtle creaminess with age.
