About The Brewery, History And Region

Weihenstephaner Korbinian takes its name from Saint Korbinian, the man closely connected with the beginnings of Weihenstephan itself. In 725, Korbinian and twelve companions established a Benedictine monastery on Weihenstephan Hill above Freising, laying the foundations for a brewing tradition that would eventually become famous around the world.

The official brewing history of Weihenstephan dates to 1040, when the monastery received the right to brew and sell beer. That makes the Bavarian State Brewery Weihenstephan the oldest continuously operating brewery in the world.

Over nearly a thousand years the brewery has survived fires, wars, plague and enormous political and social change. The monastery was dissolved in 1803, but brewing continued, eventually becoming part of the Bavarian state. Today the brewery remains on Weihenstephan Hill, still producing classic Bavarian beer while combining centuries of tradition with modern brewing knowledge.

Freising itself sits in Upper Bavaria, just north of Munich, with views across the Bavarian countryside toward the Alps. Beer is deeply woven into the culture of the region, and Korbinian is a wonderful example of the richer side of Bavarian brewing.

The name is particularly fitting. Saint Korbinian remains the patron saint of Freising and an important figure in the history of the city and monastery. This powerful Doppelbock honours that legacy with a beer that has plenty of character, depth and unmistakable Bavarian heritage.

Cellaring Potential

Weihenstephaner Korbinian is excellent to drink now, with its plum, fig, chocolate and toffee flavours showing beautifully.

Its 7.4% strength and rich malt character also mean it can develop nicely with careful short term cellaring. With time, the fruit and malt flavours can become softer and more integrated, bringing out deeper notes of dried fruit, caramel and chocolate.
