About the Winery

Onannon Wines is a collaboration between three friends, Will Byron (formerly of Stonier), Kaspar Hermann (ex-Bindi), and Sam Middleton (Mount Mary), each bringing exceptional cool-climate expertise to this boutique project. Based on the Mornington Peninsula, they focus on crafting small-lot, vineyard-driven wines with minimal intervention and maximum site expression. The Mornington Pinot Noir is their flagship regional blend, combining fruit from premium sites to create a wine of harmony, vibrancy, and depth.
