Minim Patsy Fiano 2025 is a zesty, savoury, seaside leaning white, all lemony crunch, tropical lift and leesy texture made for hot days.

Minim’s “Patsy” is a deliberately thirst quenching take on earlier picked Fiano from northern Heathcote (Chalmers Vineyard), handled simply with native yeast, a short skin soak, and time on fine lees for extra shape and crunch. 

Tasting Notes

Aroma: Fresh lemon juice, ripe tropical fruit, a hint of white pepper and a faint briny/nautical edge.

Palate: Dry, savoury and crisp with juicy fruit flavour, bright natural acidity and subtle phenolic grip from a short pre ferment skin soak. 

Finish: Clean, textural and saline lees built length with a mouth-watering snap (hello “lacto-pickle” vibe).

• Oysters, calamari, sardines on toast, or a simple prawn salad

• Fish tacos, grilled zucchini + lemon, summer antipasto plates

About the Winery / Producer / Region

MinIM is the small-batch project of Tim (a former geology student turned winemaker), focused on local Central Victorian sites, minimal handling, native yeasts, and building interest through thoughtful ferments and gentle élevage. The wines are made at Boomtown Winemakers Co-operative in Castlemaine, Victoria.
For 2025 Patsy, the fruit is from northern Heathcote’s Chalmers Vineyard (farmed by Troy McInnes), picked earlier for that sweet spot of flavour and “jumping” natural acid.

A “right now” style, delicious young and crunchy. Drink 2026 to 2028 for peak freshness and texture.
