A gently cloudy, Bodaimoto brewed nigori sake with tang, soft sweetness and lively freshness.

Gozenshu Bodaimoto Nigori Hiire is a junmai “usu-nigori” (lightly cloudy) sake from Tsuji Honten (Gozenshu) in Okayama, brewed using the ancient Bodaimoto method where natural lactic acid bacteria plays a key role. The result is a distinctive balance of bright, white wine like acidity and gentle sweetness often described as an “adult Calpis” vibe made more settled and harmonious through hiire (pasteurisation).

Tasting Notes

Aroma: Green apple freshness, zesty citrus and a light fruity lift.

Palate: Soft rice sweetness with creamy nigori texture, lively lactic tang and layered umami complexity.

Finish: Clean, gently fizzy feeling freshness (natural lift), with a refreshing, persistent close.

Try it with sashimi (scallop is great), prawn salad, fried chicken, or cheeses (especially washed rind or blue styles like gorgonzola).

Gozenshu (Tsuji Honten) is known for championing Omachi rice and reviving/advancing Bodaimoto brewing,an old method that naturally builds acidity and complexity via lactic fermentation.
