About The Producer

Frédéric Cossard is one of Burgundy’s most recognisable minimal intervention winemakers. He was not born into a traditional vigneron family, but built his domaine from the ground up, beginning Domaine de Chassorney in 1996 with rented vineyard parcels in Saint Romain and Auxey Duresses. The estate later grew to include around 10 hectares across several Burgundy villages.

Cossard’s wines are known for their purity, energy and personality. The winemaking is deliberately low intervention, with native yeast fermentation, no fining or filtration, and little to no added sulphur depending on the cuvée. Bigotes fits this style beautifully, offering white Burgundy with generosity and texture, but also clarity, freshness and a strong mineral line.

The fruit for Bigotes comes from vines near Puligny Montrachet, one of Burgundy’s most famous Chardonnay villages. Although bottled as Bourgogne Blanc, the wine carries a level of depth and detail that reflects both the quality of the site and Cossard’s hands off approach in the cellar. It is a compelling choice for those who enjoy white Burgundy with a natural wine edge.
