Delinquente Jaybird Bianco Macerato 2025 is lively, aromatic and just wild enough to be interesting without drifting into the murky end of natural wine.

Made from 50% Fiano, 30% Arinto and 20% Malvasia Bianco, it brings peach, nectarine and rose blossom up front, followed by grassy freshness, pineapple, lychee and a lovely dry, salty crunch through the finish. At just 10.5% ABV, it stays light, fresh and very easy to drink.

This is a genuinely approachable orange wine. You get plenty of texture, tropical fruit, floral lift and a little savoury grip, but the wine still feels fresh, clean and fun rather than hard work.

Tasting Notes

Aroma: Peach, nectarine, rose blossom, lychee and tropical fruit.

Palate: Light bodied and energetic with grassy freshness, pineapple, ripe stone fruit and balanced acidity.

Finish: Dry and crunchy with salty savoury notes, gentle tannin and a subtle bitter edge.

Serving Suggestions

This is a great match with antipasti, grilled prawns, fresh seafood, roast chicken, pork, Mediterranean vegetables and lightly spiced Asian dishes.

Its mix of fruit, freshness and gentle grip also makes it a handy choice for grazing plates with olives, charcuterie and softer cheeses.

About The Winery

Delinquente Wine Co is the project of Riverland winemaker Greg Grigoriou, with a strong focus on Mediterranean grape varieties that suit South Australia’s warm, dry climate particularly well.

Jaybird brings together Fiano, Arinto and Malvasia Bianco from the Riverland, creating a bright and aromatic skin contact white with plenty of fruit, texture and savoury character.

The result is expressive and a little different, but still very much built around drinkability. Basically, orange wine without the homework.
