It brings together aromatic white varieties including Sauvignon Blanc, Vermentino, Viognier and a small splash of Gewürztraminer, with a little skin contact and lees ageing to build texture and grip.

The result is lively, fragrant and full of personality. Expect gooseberry, preserved lemon, apricot, oyster shell, tropical fruit and a lemon sherbet style finish. It is fresh, zesty and slightly savoury, with enough texture to make it more interesting than a simple crisp white.
