About The Vineyards And Heathcote

Fruit for the 2023 Pyrette comes from the Colbinabbin vineyard, which Bindi has worked with since 2001, and the Col Mountain vineyard, which became part of the blend in 2014. Bringing these two sources together gives the wine regional richness, fragrance, freshness and fine structure.

The established Colbinabbin parcel is positioned high on the Mount Camel Range. Its vines grow on deep red, rocky Cambrian soils across a cooler easterly facing slope. Careful harvest timing allows the fruit to develop the generous flavour expected from Heathcote while retaining vibrancy and balance.

Heathcote is renowned for Shiraz grown on ancient Cambrian soils. The region can produce deeply coloured and concentrated wines, although cooler sites and carefully selected harvest dates can bring greater perfume, energy and refinement.

Winemaking

The 2023 Pyrette includes approximately 20 percent whole bunch fruit during fermentation. This contributes floral perfume, gentle spice and additional structure while complementing the dark fruit of the Shiraz.

The Pyrette style is fermented with ambient yeast in 1000 litre open vats before maturation in French oak barrels, with approximately 10 percent new oak. The restrained oak influence builds texture and complexity without covering the fruit or vineyard character.

About Bindi Wines

Bindi is the Dhillon family property near Gisborne in the Macedon Ranges. The estate is best known for its highly regarded Pinot Noir and Chardonnay, although the Pyrette project allows Michael Dhillon to apply Bindi’s detailed and restrained winemaking approach to Heathcote Shiraz.

The focus is not simply on power or ripeness. Vineyard selection, careful harvest timing, ambient fermentation and restrained oak are used to create a Shiraz with regional authenticity, fragrance, vitality, finesse and harmony.

Cellaring Potential

Bindi Pyrette Heathcote Shiraz 2023 is smooth and harmonious enough to enjoy now, particularly after decanting. It should improve for around eight years from vintage and continue drinking well for many years beyond that point.

Cellar until approximately 2031 before approaching its mature drinking window. With age, expect the plum and violet characters to develop towards leather, dried herbs, earth, cocoa and deeper savoury spice.
