Bindi Dhillon Glenhope Riesling 2025 is a distinctive Macedon Ranges Riesling with citrus freshness, floral perfume, savoury lees complexity and a finely textured palate. The wine balances vibrant fruit with subtle depth rather than following a purely fruity style. Lime, blossom, musk and talc are supported by fresh acidity, a chalky mineral feel and gentle savoury notes from fermentation and maturation on lees. It is already delicious, though a little time in the glass allows the texture and aromatic detail to open further.

Aroma: Musk, citrus blossom, fresh lime and talc, with gentle spice and savoury lees notes.

Finish: Long, dry and balanced, with lingering citrus, savoury complexity and refreshing mineral tension.

Serving Suggestions

Serve lightly chilled and allow the wine some time to open in the glass. Pair with freshly shucked oysters, grilled prawns, scallops, white fish, roast chicken or fresh goat cheese.

Its citrus freshness and savoury texture also make it a great match for sushi, Vietnamese salads and dishes featuring fresh herbs, ginger or lime.

About The Glenhope Vineyard

The fruit comes from the Glenhope Vineyard at the northern end of the Macedon Ranges. The vineyard was established in 1995 and sits approximately 460 metres above sea level on granite soils.

New Victorian owners took responsibility for the property in 2021 and invested in vineyard infrastructure and management. The renewed focus on the site has attracted several highly regarded Victorian producers who value its elevation, cool climate and distinctive granite soils.

The elevation encourages slow ripening and helps Riesling retain natural acidity and aromatic freshness. Granite soils provide excellent drainage and contribute to the wine's fine mineral texture and precise finish.

Winemaking

The grapes were harvested in late March and fermented with wild yeast in seasoned French oak. The wine then matured for six months on fine yeast lees.

The use of older oak builds texture without adding obvious oak flavour, while the extended lees contact develops savoury complexity and greater palate weight. This careful approach preserves the freshness of the Riesling while adding depth, flow and a distinctive sense of place.

About Bindi Wines

Bindi is the Dhillon family property near Gisborne in the Macedon Ranges, approximately 50 kilometres northwest of Melbourne. The farm was purchased by the family during the 1950s, with Bill and Michael Dhillon establishing the first Chardonnay and Pinot Noir vineyards in 1988.

Michael Dhillon worked alongside winemaker Stuart Anderson from 1991 before taking full responsibility for the wines in 1998. His experience also includes time working in Champagne, the Rhône Valley and Tuscany, along with extensive study of vineyards and producers throughout Burgundy.

Bindi's approach centres on balance, purity and the clear expression of individual vineyard sites. Wild fermentation, gentle handling, long lees ageing and minimal intervention are used to preserve the natural character of the fruit.

Cellaring Potential

Enjoy now for its fresh citrus, floral perfume and savoury texture, or cellar for around six years from vintage. With further bottle age, the wine should develop greater harmony, flow and complexity while retaining its freshness and mineral character.
