Bindi Dhillon Glenhope Chardonnay 2025 is a fragrant and finely structured Macedon Ranges Chardonnay with lemon, mandarin and yellow plum at its core. Gentle spice, stony minerality and a creamy texture build through the palate, leading to a powerful yet focused finish. Produced by one of Australia’s most celebrated winemakers, this Chardonnay balances vibrancy and texture with remarkable precision. The fruit comes from thirty year old Chardonnay vines at the Glenhope Vineyard in the northern reaches of the Macedon Ranges. Michael Dhillon first made Chardonnay from this vineyard in 2022, and the vines have shown an impressive ability to develop greater complexity and palate weight with time in bottle. Expect pristine fruit, subtle oak influence, and a refined mineral edge that makes it cellarworthy. Whether enjoyed now for its freshness or cellared for added depth, it’s a wine that embodies sophistication and artistry.

Serving Suggestions

Serve lightly chilled and allow the wine some time to open in the glass. Pair with grilled snapper, roast chicken, scallops, lobster, creamy seafood pasta, mushroom risotto or soft white rind cheeses.

Its combination of citrus freshness, creamy texture and savoury detail also makes it a great match for dishes featuring butter, roasted nuts or gentle spice.

About The Glenhope Vineyard

The Glenhope Vineyard is located at the northern end of the Macedon Ranges, approximately 460 metres above sea level. Established in 1995, the vineyard is planted on granite soils that provide excellent drainage and contribute to the Chardonnay's stony texture, freshness and mineral character.

The site came under new Victorian ownership in 2021, beginning a renewed period of investment and careful vineyard management. Michael Dhillon began working with the Chardonnay fruit the following year, recognising the quality of the established vines and the potential of this high elevation site.

The Macedon Ranges is one of mainland Australia's coolest wine regions. High vineyard elevations, cold nights and a long ripening season allow Chardonnay to develop flavour slowly while retaining natural acidity. These conditions can produce wines with citrus and stone fruit intensity, fine structure and excellent potential to gain complexity in bottle.

Winemaking

The Chardonnay was fermented in seasoned French oak and matured for six months on fine yeast lees. Older barrels allow the wine to gain texture and savoury complexity without introducing strong oak flavour.

Lees maturation adds creaminess and depth through the middle of the palate, while the natural acidity and granite influenced mineral character keep the wine fresh and focused. The result is a Chardonnay that balances fruit, texture and restrained power.

About Bindi Wines

Bindi is the Dhillon family property near Gisborne in the Macedon Ranges, approximately 50 kilometres north west of Melbourne. The family purchased the property during the 1950s as part of a larger grazing farm, with the first Bindi Chardonnay and Pinot Noir vines planted in 1988.

The property covers approximately 170 hectares, although only a small area is planted to vines. Much of the remaining land is preserved as native grassland, remnant bushland and managed eucalypt plantation.

Bindi's philosophy centres on balance, purity and the expression of individual vineyard sites. Careful farming, conservation and restrained winemaking are used to preserve the natural character of each season and vineyard.

Cellaring Potential

Enjoy now for its youthful citrus, yellow plum and creamy texture, particularly after a little time in the glass. It should also develop beautifully over the next four to six years, gaining greater weight, harmony and savoury complexity while retaining its mineral freshness.
