About The Wine / Product

Minim Patsy Fiano 2025 is a bright, savoury and textural Victorian white made for warm weather, relaxed drinking and those who love wines with freshness and personality. It is crisp, dry and full of energy, with crunchy lemon acidity, tropical fruit lift and a lightly saline edge that gives it plenty of character.

Made from earlier-picked Fiano grown at Chalmers Vineyard in Northern Heathcote, Patsy is handled with native yeasts, stainless steel fermentation, a short skin soak and time on fine lees. The result is a refreshing, slightly textural white with a modern Australian feel and plenty of Italian variety charm.

Tasting Notes

Aroma: Fresh lemon juice, tropical fruit, white pepper and a faint briny, coastal edge.

Palate: Dry, savoury and crisp, with juicy citrus, lively natural acidity, subtle phenolic grip and fine lees texture.

Finish: Clean, mouth watering and lightly saline, with lingering lemon, tropical fruit and gentle spice.

Serving Suggestions

Serve well chilled. Enjoy with oysters, calamari, grilled prawns, fish tacos, roast chicken with herbs, antipasto, fresh salads, zucchini with lemon, or feta and watermelon with mint.

Minim Wines is a small Victorian producer known for expressive, minimal intervention wines that highlight freshness, texture and drinkability. The wines often focus on alternative varieties and vineyard sites that suit Victoria’s climate, giving each release a bright, contemporary edge.

The Fiano for Patsy comes from Chalmers Vineyard in Northern Heathcote, a highly regarded site for Italian grape varieties. Heathcote’s warm days, cool nights and ancient Cambrian soils help produce wines with natural acidity, savoury detail and strong regional character. Fiano, originally from southern Italy, is especially well suited to this style, offering citrus, texture and a refreshing savoury finish.
