Blending fruit from across Tellurian’s sustainably managed vineyards, it delivers hallmark regional richness with a refined, medium-bodied structure. “EVO” represents evolution ,a contemporary take on classic Shiraz that balances power with poise.

Aroma: Lifted notes of dark cherry, blackberry, and plum with hints of pepper, violet, and spice.
Palate: Smooth and concentrated with juicy black fruit, fine tannins, and savoury complexity. Elegant oak integration adds depth without overshadowing the fruit.
Finish: Long and graceful, finishing with dark chocolate, spice, and gentle earthiness.
Food Pairing / Serving Suggestions
Perfect with roast lamb, beef short ribs, grilled portobello mushrooms, or aged cheddar. Decant for 30–45 minutes and serve at 18°C for the best expression.
About the Winery
Tellurian Wines, founded in 2002 by Ian Hopkins, is a boutique family-owned winery located on the red Cambrian soils of Heathcote, Victoria. Known for its focus on Shiraz and Rhône varieties, Tellurian has built a reputation for producing wines of elegance and regional integrity. Under the guidance of winemaker Tobias Ansted, their approach combines sustainable vineyard management with gentle, small-batch winemaking to showcase the depth and vitality of Heathcote fruit.
