Bière de Provision was created as an ode to these old world ales, but with its own unique expression thanks to a unique, wild-caught strain of yeast isolated in the brewery a number of years ago. Much in the vein of the old world style, ours is made to hydrate, refresh and is also really well-suited to cellaring! A nice simple grain bill and hop addition provide the perfect backdrop for this fermentation-focused table ale.
This beer champions a specific strain of yeast we caught wild in our original Alphington brewery a number of years ago. It is also open fermented in French oak, drawing a contribution from airborne yeast and bacteria within our brewery.
This combination of microbes delivers an approachable wild ale with a lot of intrigue that will develop with cellaring.
Pours straw-coloured and naturally cloudy with a billowing white fluffy head. Expect fresh hay and strong funk notes giving way to familiar aromatics of stewed fruits and a kiss of wood. Cellar-time develops characters of blue cheese and forest floor. Flavour-wise, Bière de Provision is super crisp and highly refreshing.
