Occams Razor Shiraz 2025 750ml

“Fresh Heathcote Shiraz with raspberry, red plum, spice and a savoury smoked meat finish.”

Jasper Hill Occam's Razor Shiraz 2025 is a fresher, more immediately approachable take on Heathcote Shiraz, made from fruit sourced from two vineyards across the region.

Raspberry, red plum and dark cherry lead the way, with spice, cola and smoked meat adding a savoury edge. The palate is juicy and vibrant, with fine tannins and fresh acidity keeping the wine lively rather than heavy. The 2025 was deliberately picked earlier to preserve freshness and give the wine real early drinking appeal.

This is a great choice if you like Heathcote Shiraz but do not always want something huge and brooding. There is still plenty of depth here, but the fruit feels brighter, the tannins finer and the overall style much easier to get into.

Tasting Notes

Aroma: Raspberry, red plum and dark cherry with spice, cola and subtle smoked meat.

Palate: Juicy red fruit with savoury spice, fine tannins and fresh natural acidity.

Finish: Long and savoury with lingering plum, spice, cola and a gentle smoky edge.

Serving Suggestions

A natural match with grilled steak, roast lamb, barbecue pork and sausages.

It also works beautifully with mushrooms, slow cooked beef and mature cheeses, where the savoury spice and bright fruit have plenty of character to hold their own.

About The Winery

Jasper Hill is one of Heathcote's benchmark producers and has been making Occam's Razor since 2001. Unlike the estate wines, Occam's Razor is made from purchased Heathcote fruit, currently sourced from two vineyard sites, one in the north of the region and another near Lake Eppalock.

The wine follows the same general philosophy as the Jasper Hill range, but the earlier picking and different vineyard sources give it a brighter, more immediately drinkable personality.

It is a good example of the old idea that less can be more. Plenty of flavour, just without trying to knock the glass out of your hand.

Cellaring Potential

The 2025 is designed to be enjoyed young, with its bright fruit, fine tannins and savoury freshness already in a very good place.

It should continue to develop nicely over the next 5 to 8 years, although there is no real need to wait.

Collector’s Note
