Admiral Ackbar is a refreshing yet textural Semillon we make from the Quarry Ridge Vineyard, in Kilmore. Rusty shocks us every year, learning from each passing season to somehow reach new heights with each new vintage. Like one of his famed sculptures this is as chiseled as Mark Webber’s cheek bones. If you like this guy, you’ll also like his partner, the Admiral Adama Semillon we make up in South Burnett, in Queensland. Both show the incredible range possible with this variety.
Site: Quarry Ridge Vineyard, Kilmore, Victoria. Production: 100% Semillon. Destemmed ensuring whole berry remained, fermented in stainless steel and kept below 20 degrees celsius. Two weeks on skins but a gentle extraction process. Pressed into stainless and racked twice. A touch of sulphur added at bottling, unfixed and unfiltered. 12.6% 5987 bottles.
Tasting notes: Lemon curd and passionfruit, enough said, really! Super fresh, with a clean line of acidity and a very light chalky tannin from the skin contact.
