The base wine was predominately made up of 2008 Shiraz which was aged in neutral oak for 5 years, some 2007 Hillside was added to the blend before secondary fermentation in bottle via methode champenoise. The final dosage, an addition of Kay’s NV tawny. Brick red in colour. Alluring, rich fruit showing satsuma plumb and Christmas cake, some earthy notes with hints of cigar box. O the palette, creamy mouth filling bead up front followed by concentrated flavours of blackberry fruit, dark chocolate and toffee. Gentle tannins and fine acidity to finish.
